The elevation of one of the area of the Cabernet Franc block is 220 meters above sea level near the chilly Kolodya ravine, the other land plot is located at the foothill of the Semisam mountain range with thick fogs in the early morning hours that enrich grapevines with moisture. This variety is adapted to low temperatures and needs more time to ripen when grapes are turned into rich black color tinged with blue. It offers medium acidity with flavors of cherry, smoked tomatoes and sweet pepper on the palate.
The fox is a predator of the canine family however in wild life it has more in common with cats. Both animals have a peak of activity at night as they can see well in darkness and have similar hunting tactics, also they both have a rough tongue and retractable claws. Red foxes are great neighbors for vine growers - they are natural regulators of rodents and insects though they do enjoy eating grapes. Foxes are beautiful and at the same time cunning. A fox on a Cabernet Franc label captures perfectly the character of wine: playful, refined and mischievous.
It appears with dense and intense color. Flavor is displayed as deep and complex, with wide array of aromas characterized by notes of blueberries and strawberry jam, raspberry, chalk, black lead, wet forest and some resonated nuances. The palate is rich, complex, full- bodies, it also feels full and voluminous accompanying with well- balanced berry and oak notes. Excellent length and spicy flavor in the aftertaste. It elegantly reveals new nuances of aroma and taste over time in the glass.

Manual harvesting, manual sorting of grape bunches, destemming, optical sorting of grape berries, gentle grape crushing. A pulp fermentation and subsequent post-maceration in stainless steel tank for 4 weeks, systematic remontage, delestage. 93% was aged in new barrels made of French oak 225-litres and 500-litres for 9 months
Cherry color to the eye with purple highlights. The aroma bouquet is complex and multi-layered, flanked by notes of strawberry and raspberry, Jamaica pepper, bloomy linden, silica, graphite, saffron, thyme, chocolate and other herby shades. The palate is elegant, well-balanced, with hues of red berries, spices, coffee beans and Jamaica pepper having the presence of medium tannins, fruit and spicy lingering finish.

Grape was harvested from the higher rows of the vineyard’s lower block, grape berries from this area were more aromatic and juicy in 2021. It was the quality of the berries that determined the style of the wine. Manual harvesting in 20 kg boxes, grape cooling, manual sorting of grape bunches, destemming, gentle grape crushing, fermentation using post-fermentation maceration in French oak barrels for a period of 21 days, daily remontage during the first week, thereafter pigeage. Aging in 225-litre barrels of the first and second passage made from French oak for a period of 12 months. Bottle aging – not less than 3 months.
