The Riesling block is located on the plateau where chilly air rolls down from the mountains, and the area is covered with fog in the early mornings. Soils are stratified, alluvial with intrusion of gneiss, pebbles and limestone.
The hoopoe is a resident of the vineyards and ravines of the Skalisty Bereg Winery. And Upupa is an onomatopoeic imitation of its distinctive song: “Oop-Oop-Oop. The hoopoe’s fluttering flight is leisurely, like that of a moth, and coloration is variegated and ornamental. Despite its beauty the hoopoe symbolizes not vanity but rather respect for elders: young birds always care for their adults, plucking out their old feathers and bringing them food. This exceptionally picturesque and exalted creature perfectly captures the expressive, vibrant, and profoundly deep essence of the Riesling.
Pale straw yellow wine with light golden hue. Flavor is complex, rich, expressive with aromas of acacia, honey, pear and accompanied by notes of citrus and quince. The palate is full-bodied with good density and well-balanced, having soft acidity. On the finish, the wine leaves a long-lasting impression of honey and lime.

Manual harvesting, grape cooling, manual sorting of grape bunches, destemming, gentle grape crushing, delicate pressing cycle using a pneumatic press under inert gas atmosphere. Grape must clarification by debourbage, fermentation and further aging in stainless steel tanks (40%) and in 225-litre and 500-litre barrels made from French oak (60%). In the new barrels - 67% of total volume, in the barrels of second passage - 33%. Aging on gross lees in oak barrels for a period of 10 months with periodic bâtonnage. MLF applied.
Pale straw yellow color to the eye. Flavor is fresh and bright with shades of lime, spring flowers, green apple, gradually revealing the notes of propolis and citrus, delicately sweet nuances of blossom dust and apricot. The perception on the palate is intense, thick and gastronomic, with hues of apple, lemon zest, kiwi. On the finish it has vibrant acidity and long-lasting citrus aftertaste.
