Breath of waves

Pale straw yellow to the eye. On the nose it feels elegancy and minerality, silica, linden, delicate flavors of yoghurt, macadamia, Brazil nut, baked milk, soft brioche (croissant). The palate is full-bodied, thick, expressive and well-balanced, it is accompanied by notes of almond, cinnamon, cloves, apple, lemon, red-ripe plum, apricot. On the finish it is long-lasting and with fruit and spicy aftertaste.

production method

Manual harvesting in the beginning of September 2021. Grape processing and fermentation of each block separately: destemming, gentle grape crushing, pressing under inert gas atmosphere, stabulation, grape must clarification by debourbage, 30% of total volume were fermented and aged on lees in oak barrels for a period of 10 months with regular bâtonnage.

Flax
