Chardonnay is called “the winemaker’s variety” because production method reveals versatility of this grape variety. The soil provides the basis. Rocks were composed from decayed shellfish and sea creatures that had inhabited the sea million years ago. Wine is touched with old-fashioned hues, and rest is left to barrel-aging.

Label design

The great eagle-owl is the only bird of its kind having such strength and power. It is the apex predator and terror of all predatory birds except the largest eagles. Wingspan of the great eagle-owl can reach up to two meters. The owl inhabits the Winery grounds, nearby forests and the Utrish Nature Reserve. It is listed under Category II in the Red Book as a vulnerable species. Its sage gaze and impressive appearance inspired the winemakers in creating this contemplative Chardonnay aged in an oak barrel.

Straw yellow color of wine. Flavor is elegant, full-bodied, with vanilla and fruit notes. The nose firstly recalls sweet lollipop and pear-drop candies, also telling aromas of coconut, banana, pineapple, mango, vanilla, brioche and light hues of barrel-aging. On the palate it offers an intense, full-bodied, round and oily texture with aroma bouquet of fruit, brioche, spices and long-lasting vanilla finish with soft acidity.

Manual harvesting in the end of August 2020, destemming, gentle grape crushing, pressing, debourbage, fermentation: 60% in stainless steel tank, 40% in new barriques and tonneaux made of French oak with further aging on lees for 12 months.

Straw yellow color to the eye. Flavor is elegant and classic. The nose firstly recalls bright hues of yellow ripe fruits: apricot and peach accompanied by citrus notes of honey and baked apple, revealing further the nuances of fresh toast and butter, fluffy sponge cake, canelé, candy floss and caramel. The palate is full-bodied, rich and complex with hints of brioche, yellow tropical fruits such as pomelo, mango, banana, and aromas of marshmallow with mild vibrant acidity and long-lasting creamy fruity tones in aftertaste.

Manual harvesting, grape cooling, manual sorting of grape bunches, destemming, gentle grape crushing, delicate pressing cycle using a pneumatic press under inert gas atmosphere. Grape must clarification by debourbage, fermentation and further aging in stainless steel tanks (40%) and in 225-litre and 500-litre barrels made from French oak (60%). In the new barrels - 67% of total volume, in the barrels of second passage - 33%. Aging on gross lees in oak barrels for a period of 10 months with periodic bâtonnage. MLF applied.
