Vineyards

Land plots are located on the southern and northern faces of the Semisam Mountain range at elevation from 150 to 250 meters above sea level. The slope in some areas reaches up to 17 degrees. From one side it is surrounded by the sea, from the other - by relict pine, unique juniper-pistachio and hornbeam forests. The soils are mainly sod-carbonate and clay-lime stone. Humus and clay retain mineral elements, and the presence of fine gravel, chert and marl ensures proper drainage.

Label design

The Caucasian forest cat is the ancestor of all domestic cats. It inhabits hollows, crevices and abandoned dens of badgers or foxes. Each cat has its own controlled territory approximately three kilometers in length. We do not know exactly how many individuals share the Winery territory, as it is a rare Red Book species, but almost every day we meet a forest cat in the vineyards and already gave it a name - Rocheuse. This name is derived from the French “Côte rocheuse” which means “Rocky Shore”. An excellent name for our totemic cat which incidentally really enjoys eating grapes.

It shows intense garnet colors. The nose is rich in bright fruit and berry scents of blackberry, plum, black cherry. Later it opens with flavors of marshmallow, vanilla, chocolate and white pepper, smoothly turning into shades of spices and spicy herbs, black pepper and linseed oil. The palate is intense, juicy, fruity and voluminous with balanced complex of moderate tannins, medium acidity and good length of fruit and spicy finish.

Manual harvesting, manual sorting of grape bunches, destemming, optical sorting of grape berries, gentle crushing of each grape variety separately. A pulp fermentation and subsequent post- fermentation maceration in stainless steel tank for 4-5 weeks, systematic remontage, delestage. 80% was aged in new barrels made of French oak 225-litres and 500-litres for 12 months

The eye shows dark-cherry color. Flavor is seductive and elegant. It opens on the nose with spices: Jamaica pepper, black pepperand herbs. Revealing further with touches of plum marshmallow, black cherry and blackcurrant. The wine develops beautifully in the glass. The palate is juicy, well-balanced, with good acidity and predominating notes of sweet berries, chocolate and walnut. Aged and silky tannins are accompanied with nuances of graphite and resin. Finish is marked by long-lasting mineral and fruity aftertaste.

Manual harvesting, manual sorting of grape bunches, destemming, optical sorting of grape berries, gentle grape crushing of each grape variety separately. Pulp fermentation using post-fermentation maceration in French oak barrels for a period of 4 weeks, regular remontage. 100 % of wine was aged in the barrels of the first and second passage: each grape variety separately. Assemblage, bottling, bottle aging – not less than 3 months.
